Tous les acteurs des filières bœuf et veau sont conviés à participer au 5e Colloque de l’industrie bovine québécoise (CIBQ). Ce rendez-vous incontournable de l’industrie est de retour à Lévis le 17 novembre 2026.
Sous le thème « Passer à l’action », la programmation de la journée met l’accent sur la recherche de solutions aux défis communs de l’industrie.
Nouveauté cette année : l’événement sera webdiffusé pour rejoindre un plus large public. Industry players from all parts of the beef and veal sectors are invited to participate in the 5th Colloque de l’industrie bovine québécoise (CIBQ, Quebec cattle industry symposium). This must-attend industry event is back for another edition on November 17, 2026, in Lévis.
This year’s theme is Passer à l’action (Taking Action). The program for the day is all about finding solutions to common challenges within the industry.

Gilbert Lavoie - Forest Lavoie Conseil
M. Gilbert Lavoie jouit d’une expérience de plus de 35 ans dans le secteur agroalimentaire. Depuis 2008, à titre d’économiste chez Forest Lavoie Conseil, il se spécialise dans les analyses économiques et financières, l’analyse et la diffusion d’information sur les marchés, les planifications stratégiques, le coaching, la concertation entre les parties prenantes et la réalisation d’expertise professionnelle. M. Lavoie et son équipe ont accompagné la filière veau et la filière bœuf dans la réalisation de leurs planifications stratégiques respectives. De plus, au cours de la dernière année, il a piloté trois études portant sur l’environnement d’affaires actuel, sur les enjeux de compétitivité et les avenues de solutions pour les quatre secteurs de production que sont le veau d’embouche, le bouvillon d’abattage, le veau laitier et le veau lourd (veau de grain et veau de lait).
Mr.Gilbert Lavoie boasts over 35 years’ experience in the agri-food sector. Since 2008, he has been an economist with Forest Lavoie Conseil, where he specializes in economic and financial analysis, market information analysis and dissemination, strategic planning, coaching, collaboration among stakeholders, and providing technical expertise. With his team, Mr. Lavoie has guided the beef and veal sectors through their respective strategic planning processes. In the past year, he has also piloted three studies on the current business environment, competitiveness issues, and potential solutions for the four production sectors: feeder calves, fed cattle, dairy calves, and heavy veal (i.e., grain-fed veal and milk-fed veal).
Mario Hébert - agent de concertation de la filière bœuf
M. Mario Hébert possède plus de trois décennies d'expérience dans le secteur agricole et agroalimentaire québécois. Il a occupé des postes de direction au Centre d'insémination artificielle du Québec (2012-2022), à La Coop fédérée (2002-2012) et auprès de l’Union des producteurs agricoles (1991-2001). Il agit depuis mars 2022 comme agent de concertation de la filière bœuf.
Mr. Mario Hébert has over three decades’ experience within Quebec’s agriculture and agri-food sector. He has held positions with the Centre d'insémination artificielle du Québec (2012–2022), La Coop fédérée (2002–2012), and the Union des producteurs agricoles (1991-2001). Since March 2022, he has served as beef industry collaboration officer.
Jean-Sébastien Bouffard - Abattoir BL
Producteur agricole et acteur de la filière bovine québécoise, M. Jean‑Sébastien Bouffard est impliqué dans une entreprise familiale intégrée qui contrôle l'ensemble de la chaîne de production, de l'élevage à la vente au détail. Au sein du Groupe Bouffard, il participe à l’exploitation d’une ferme comptant près de 2 000 têtes de bovins de boucherie, ce qui inclut des vaches-veaux, des sujets de reproduction et des bovins d’engraissement, d’un abattoir sous inspection provinciale ainsi que de trois boucheries spécialisées connus sous le nom Face de Bœuf.
Mr. Jean‑Sébastien Bouffard is a farmer and stakeholder in the Quebec cattle industry. He is involved in an integrated family business that controls its entire production chain, from production to retail. Within Groupe Bouffard, he helps operate a number of entities: a farm with nearly 2,000 head of beef cattle (including cow-calf, breeding stock, and feeder cattle), a provincially inspected abattoir, and three specialty butcher’s shops under the Face de Boeuf banner.
Arnaud Marchand - Chez Boulay
M. Arnaud Marchand est un chef et entrepreneur établi à Québec, reconnu pour son engagement envers les produits du terroir québécois. Chef copropiértaire de Chez Boulay, du Bedeau, des Botanistes, de l’Épicerie Québécoise et de VériTable, il développe des projets qui mettent en valeur les saveurs d’ici et le travail des producteurs locaux. Figure importante de la gastronomie québécoise, il contribue depuis plus de 15 ans à son rayonnement au Québec, comme à l’international.
Mr. Arnaud Marchand is a chef and entrepreneur based in Quebec City known for his commitment to local Quebec products. He is the chef/co-owner of Chez Boulay, Le Bedeau, Les Botanistes, L’Épicerie Québécoise, and VériTable. Mr. Marchand’s initiatives showcase made-in-Quebec flavours and the work of local producers. He is a major player in Quebec’s gastronomy scene, having helped fuel its expansion both at home and abroad for over 15 years.
Murray Gillies - Santé Animale Canada
Dr Murray Gillies a grandi dans la ferme laitière familiale à Sussex, au Nouveau-Brunswick. Il a obtenu son diplôme de l’Atlantic Veterinary College en 2011 et a occupé divers postes, notamment dans un cabinet spécialisé en médecine laitière en Nouvelle-Zélande, au sein du service vétérinaire de terrain du gouvernement du Nouveau-Brunswick et en tant que vétérinaire chargé des services techniques chez Vetoquinol Animal Health. M. Murray a été président de l’Association canadienne des vétérinaires bovins (CABV) et directeur du district 12 de l’American Association of Bovine Practitioners (AABP). Il poursuit actuellement un master en gestion de la santé animale à l’Atlantic Veterinary College, avec un projet axé sur l’utilisation des antimicrobiens dans les exploitations laitières, et a été l’expert en matière de production laitière pour l’Initiative vétérinaire pour l’usage judicieux des antimicrobiens (IVUJA) de l’Association canadienne des médecins vétérinaires en 2018 et 2022. M. Murray adore discuter de la pratique vétérinaire laitière, de la médecine vétérinaire bovine et de la science en général. Il s'intéresse également aux jeux vidéo, aux animés, à la nature, à la randonnée et à l'histoire.
Dr. Murray Gillies grew up on his family’s dairy farm in Sussex, New Brunswick. He graduated from Atlantic Veterinary College in 2011 and went on to work in various positions, including a small company specializing in dairy medicine in New Zealand, the Government of New Brunswick’s veterinary field service, and Vetoquinol Animal Health, where he was a technical services veterinarian. Dr. Gillies has served as president of the Canadian Association of Bovine Veterinarians (CABV) and director of District 12 of the American Association of Bovine Practitioners (AABP). He is currently pursuing a master’s degree in animal health management at Atlantic Veterinary College, where his study project deals with the use of antimicrobials on dairy farms. Dr. Gillies served as the dairy production expert for the Stewardship of Antimicrobials by Veterinarians Initiative (SAVI) of the Canadian Veterinary Medical Association (CVMA) in 2018 and 2022. Dr. Gillies loves to talk about dairy veterinary practice, bovine veterinary medicine, and science in general. His other interests include video games, anime, nature, hiking, and history.
Kim Stanford - Université de Lethbridge
Depuis son enfance passée sur la ferme familiale mixte de bovins dans le sud de l’Alberta, Dre Kim Stanford a développé une passion pour la recherche en production animale. Après avoir obtenu son diplôme, elle a entamé une carrière de chercheuse dans le domaine agricole en rejoignant Alberta Agriculture . Elle a d’abord été spécialiste des ovins, puis s’est concentrée sur la sécurité alimentaire dans les fermes, se spécialisant dans l’élevage bovin. Après plus de 30 ans de carrière au sein du gouvernement de l’Alberta et une réorganisation administrative complexe, on lui a offert — à sa grande surprise — un poste de professeure agrégée à l’Université de Lethbridge. À l’université, elle a créé le balado « Cows on the Planet » pour fournir une analyse équilibrée des problématiques entourant l’industrie bovine. Elle poursuit ses recherches sur la sécurité alimentaire et la sécurité des aliments pour animaux, se concentrant sur les coproduits et les aliments alternatifs pour bovins.
After being raised around cattle on the family mixed farm in southern Alberta and a little bit of schooling in between, Kim worked as a research scientist with Alberta Agriculture first as a Sheep Scientist before starting her work with on-farm food safety and specializing in beef cattle.After a career of more than 30 years with the Alberta Government and some murky government reorganization, somewhat to her surprise she found herself at the University of Lethbridge as an Associate Professor. At the University, she started the “Cows on the Planet” podcast to provide balanced information on beef-related issues and has continued her research in food safety and feed safety of byproducts and non-traditional feeds.
Cindy Jaton, agr., MBA, PhD - Lactanet
Cindy Jaton est directrice de la génétique et de la traçabilité chez Lactanet. Elle œuvre depuis plus de 15 ans dans le domaine de la génétique bovine laitière.
Titulaire d'un MBA et d'un doctorat en génétique et amélioration animale, Cindy combine une expertise scientifique et une vision stratégique pour soutenir le progrès génétique et l'utilisation des données au bénéfice de l'industrie laitière canadienne. Elle a grandi sur une ferme laitière et partage aujourd'hui sa vie avec son conjoint, également producteur laitier, et leurs trois filles. Cette réalité lui permet de garder un lien étroit avec les enjeux du secteur et les besoins des producteurs.
Cindy Jaton is director of genetics and traceability at Lactanet. She has worked in the field of dairy cattle genetics for over 15 years.
Ms. Jaton holds an MBA and a doctoral degree in animal improvement. She combines her scientific expertise and strategic vision to support genetic progress and data use to benefit Canada’s dairy industry. She grew up on a dairy farm and now shares her life with her spouse, also a dairy farmer, and their three daughters. This keeps her in close touch with farmers’ needs and issues of importance to the sector.
